1 T. Olive Oil or Canola Oil
1 Boneless Chuck Roast- 2-3 Lbs.
1 tsp. Salt
1/2 Tsp. Pepper
3 Medium Onions, sliced
1 Cup Beef Broth
3/4 Cup of Beer
1 T. Brown Sugar
1 1/2 T. Dijon Mustard or Spicy Brown Mustard
1 T. Cider Vinegar

Heat oil in large skillet. Add roast; cook about 10 minutes until browned on all sides. Sprinkle with salt and pepper.
Place onions in slow cooker (crock pot). Place beef on onions. In a small bowl combine remaining. Pour over beef.
Cover and cook on Low setting for 8-10 hours or on High for 4-5 hours.
Remove beef and slice thin. Serve with onions and juices from pot.

Food prepared on a slow cooker are great to use during the work week. Put it together that morning or the night before. Plug in before you go to work and it's ready when you return.
For thicker juices, combine 1 T. corn starch with 2 T. water. Pour into pot, cover and turn on high for a few minutes.
