4-6 large kale leaves
1 clove garlic peeled and pressed
1-2 tbsp fresh lemon juice
1-2 tbsp olive oil
1/2 tsp kosher salt (or 1/2 as much table salt)
1/3 cp toasted and coarsely chopped walnuts
fresh grated parmesan cheese (optional)

Directions:

strip leaves off stems and discard stems
stack and bunch leaves and sliver them very thin
in large bowl stir together:
lemon juice, oil and salt
toss in with leaves
add more lemon and/or salt to balance flavor
toss in nuts and parmesan

kale must be very fresh and slivered very thin
