6 thick boneless Pork Chops
Olive Oil
1 large jar Ragu Spaghetti Sauce
1 Beer
1 small can Tomato Paste
1 diced onion
1 diced green pepper
3-4 cloves minced garlic
1 tsp. sweet basil
1 tsp. Oregano
1 1/2 boxes Medium shells, Penne or Rigatoni pasta
6 slices mozzarella cheese
Freshly grated Parmesan Reggiano cheese to pass.

In a large skillet, over medium high heat, saute' Pork chops in enough olive oil to generously cover bottom of pan until brown on both sides (8-10 minutes per side). Remove chops from pan. Add Onions and peppers to drippings and saute for 3-4 minutes until just soft. Add garlic and cook for 1 additional minute stirring constantly. In the meantime, combine Ragu, spices, beer and Tomato paste in large mixing bowl and whisk with spoon until completely combined.
When onions, peppers and garlic are done, add in sauce mixture and stir and bring to simmer. Add chops back to pan and cover. Simmer over med-med.-low heat (maintaining strong simmer) for 1 1/2 hrs. The last half hour, cover each cop with a slice of cheese.
Cook pasta according to package directions and drain.
To serve, remove chops from pan to serving platter and cover with foil to keep warm. Reserve 1 1/2 cups sauce to pass, and toss pasta with the rest of the sauce in the pan. Pass shredded Parmesan Cheese as garnish.
NOTE: if skillet is not big enough for chops and sauce you may combine pan drippings with sauce mixture, transfer chops to a large baking pan and pour sauce over chops. Cover with foil and bake at 375º for same time, removing foil and adding cheese last half hour.

Can easily be stretched to accommodate 8 people by adding 2 more chops, and an additional small jar of Ragu.
