Salad Ingredients
3 cups cooked rice, cold
15-oz can pinto beans, drained and rinsed
15-oz can black beans, drained and rinsed
10-oz package frozen peas, thawed
1 cup celery, chopped
½ cup red onion, chopped
8-oz can diced green chiles, drained
¼ cup cilantro, finely chopped

Garlic Dressing Ingredients
1/3 cup white wine vinegar
¼ cup olive oil
¾ tsp salt
½ tsp garlic powder
½ tsp black pepper

Directions:
Directions:
In a sealable jar, combine all garlic dressing ingredients. Close jar and shake well. Set aside. In a 2½ quart container, combine all of the salad ingredients, folding gently so beans don't break apart. Toss in the garlic dressing, cover, and chill up to 24 hours before serving.

*Note: If you don't want to make the garlic dressing, you can use 8 ounces of your favorite Italian salad dressing.

This recipe works well with several rice substitutions. Orzo, brown rice, barley, and quinoa make tasty variations of this easy recipe.
