7 egg whites
1 tsp cream of tarter
1/2 tsp salt
1/2 c. sugar
7 eggs, separated
1/4 c. water
1 tsp vanilla
1 tsp lemon extract
1 1/4 c. sifted cake flour
1 c. sugar
1/2 tsp baking powder

Directions:
Directions:
In a large mixing bowl, beat egg whites, cream of tarter and salt until soft mounds form, add 1/2 cup of sugar 1 Tablespoon at a time. Continue beating until very stiff and straight peaks form. Set aside.
In a small mixing bowl combine egg yolks, water, vanilla and lemon extract. Add 1 1/4 c. cake flour, 1 c. sugar and 1/2 tsp baking powder. Beat at medium speed for 1 minute.
Fold 1/4 of the batter at a time into beaten egg whites using a wire whisk. Blend gently but thoroughly after each addition. Pour into an ungreased 10" tube pan. Bake at 350 degrees for 40 to 50 minutes. Invert pan immediately, cool in pan. Using a sharp knife cut around the sides of the cake to remove cake from the pan. Let cool and frost with your favorite frosting.
