2/3 c. sugar
1/2 tsp salt
2 1/2 tsp cornstarch
1 T. flour
3 c. whole milk
3 egg yolks
1 T. butter
1 tsp vanilla
One prepared graham cracker crust
2-3 sliced bananas
1 container of cool whip
Chopped nuts, optional

Directions:
Directions:
Mix sugar, salt, cornstarch, flour, milk in top of a double boiler. Cook until mixture boils and then remove from heat. Beat egg yolks in a medium bowl and add a couple of tablespoons of hot mixture slowly to the eggs and beat well being careful not to cook the eggs. Add egg mixture back to filling mixture in double boiler and stir well and return to heat until mixture thickens and comes to a boil, then add butter and vanilla and cook 1 minute more. Remove from heat and cool for 15 minutes. Pour 1/3 of filling in bottom of crust, top with half of the sliced bananas, add 1/3 of filling over bananas and top with remaining bananas. Pour remaining filling on top. Cover with plastic wrap or wax paper and place in refrigerator. to serve, top with cool whip, sliced bananas and chopped nuts. Cut and serve.
