Angel food cake
3 sliced peaches
1/4 cup honey
1 Tbsp lemon juice
2 Tbsp confectioner's sugar
1 cup nonfat Greek yogurt
1/2 cup heavy cream
1 egg white
1 cup coarsely chopped pistachios
3 Tbsp sugar
1/4 tsp cinnamon

Note: For a whole angel food cake, I would triple the peaches and cream mixture. There are enough pistachios for the whole cake.

Toss peach slices, honey and lemon juice in bowl. Let stand at least 15 minutes. Mix confectioner's sugar and yogurt in another bowl. Beat the whipping cream until stiff peaks form. Fold into the yogurt mix and refrigerate. For the sugared pistachios: heat oven to 350º, line a baking sheet with foil. Slightly whisk an egg white in a small cup. Transfer 1 Tbsp to a bowl, then whisk until frothy. Discard the remaining egg white. Add pistachios, sugar and cinnamon. Toss to combine. Spread on baking sheet and bake about 8 minutes until toasted and dry. Cool and break apart.
To assemble: slice angel food cake into two layers. On the first layer, spoon peaches and then yogurt mixture. Then add second layer, repeating with the remaining peaches and yogurt. Garnish the top with the pistachios.
