1 (7oz.) jar roasted red bell peppers, drained and
coarsely chopped
1 (6 oz.) jar marinated artichoke hearts, drained
and coarsely chopped
1/2 cup grated Parmesan cheese
1/3 cup olive oil or less (add as needed)
1/4 cup drained capers
4 garlic cloves, chopped
1 Tbs. lemon juice

Directions:

Combine all ingredients in the food processor. Process using on/off until mixture is well blended and chopped fine. Transfer mixture to medium bowl. Season with salt and pepper. Cover and refrigerate several hours. Serve with crackers, tortilla chips or fresh vegetables.
