1 large onion chopped
2 tbsp of butter
3 cups of soft bread crumbs (made from 6 slices of bread in a blender)
1/2 tsp poultry seasoning
1/2 tsp salt
1/2 tsp pepper
3 tbsp hot water
1 egg well beaten
2 tbsp oil
2 lbs flank steak cut with a pocket cut from the narrow end (a U shaped pocket)

Directions:
Directions:
Saute onion in butter
Mix dry ingredients and seasonings with hot water in a bowl
Add egg and onions and combine
Stuff flank steak into pocket with mixture
Roll and tie with cooking string
Brown meat on stove top- this will take about 20 minutes
Transfer meat to oven in a 325º oven for 1 1/2 hours

*optional- add sliced onions and butter around meat before placing in oven. Once meat is cooked, remove from pan and a pan gravy can be made with sliced onion and juices by adding a small amount of gravy master, a package of onion soup mix, 2 approximately tablespoons of flour and 2 cups water. Cook and thicken on a stove top and strain.

Let meat rest and slice. There will be stuffing in each slice!
