3 sweet potatoes
2 cups heavy cream
1 T chipotle pepper paste
Salt and pepper to taste

Preheat oven to 350º.

(If you can't purchase chipotle paste, buy a small can and press contents through a fine sieve.)

Heat cream and pepper paste over low heat. Do not allow to boil.

Slice potatoes thinly and place a layer in a buttered 8x8 pan. Season lightly with salt and pepper. Pour about 1/4th of the cream mixture on top. Continue layering until potatoes and cream are used. Bake for an hour and let rest about 15 minutes before serving.

This is actually a recipe from Bobby Flay of the Food Network Channel. I served it with grilled cornish game hens and a watermelon salad (recipe in cookbook). It was great!.
