1 can (7 ounces) chopped green chiles
1/2 cup baking mix or all-purpose flour
4 cups shredded Monterey Jack cheese
12 eggs
1 cup evaporated milk
1 cup cottage cheese
1/2 teaspoon baking powder
1 teaspoon salt
pepper to taste
dash paprika

Preheat oven to 325º, Spray 13x9-inch glass baking dish with non-stick cooking spray. In a small bowl, toss chiles with baking mix; spread evenly into bottom of dish. Top with cheese. In a large bowl, beat eggs, milk, cottage cheese, baking powder, salt, pepper and paprika. Pour egg mixture over cheese. Bake 35 -40 minutes or until light brown. Let rest 5 minutes before cutting. Serve with salsa, sour cream and warm tortillas if desired.
