12 oz. Beef tenderloin
4 tbsp. Hoisin sauce
1 1/2 tsp. Cornstarch
1 1/2 c. Crisco oil
4 cloves Garlic
5 thin slices Ginger, minced
2 Scallions, white part only, cut into thin shreds
4 tbsp. Honey
2 tsp. Dark Soya sauce
Fresh Chinese parsley
Sesame seeds

Combine garlic, ginger and scallions in a bowl and set aside. Mix Hoisin sauce and cornstarch in a bowl. Thinly slice beef across the grain. Coat slices with Hoisin sauce mixture and let sit for 20 minutes. Heat 1 1/2 c. Crisco oil in wok and heat. Deep- fry marinated beef for 1 minute. Lift out with strainer, drain and set aside. Discard oil, wipe wok clean and add 2 tbsp of oil and heat.Stir- fry garlic, ginger and scallion for 1 minute. add Honey and Soya sauce to the mixture and cook for 15 seconds. Return the beef to the wok. Stir- fry for 1 minute until beef is glazed. Serve on a platter with parsley and sesame seeds.

Accompany with rice, noodles or warm steamed buns.
