1 large onion, chopped
2 cloves garlic, minced
2 lbs. hamburger
1 lb. spinach (frozen or fresh), chopped
1/4 cup Parmesan Cheese, shredded
2 eggs
1 can tomato sauce
2 Tbsp. butter
2 Tbsp. flour
1/4 tsp. salt
1 cup milk
1 recipe of Basic Crepes (recipe in book) made in
advance

Directions:
Directions:
Brown Hamburger with onion and garlic. Add spinach, Parmesan cheese; heat through. Turn off burner and add eggs. In a shallow dish, pour tomato sauce to cover bottom. On each crepe, place 1/4 cup mixture of meat, roll and place seam side down in the dish.
Make a sauce by melting butter in pan over low heat, add flour and mix until bubbly. Remove from heat and add milk. Stir until smooth and add salt and pepper. Cook for 1 minute. Pour over crepes, cover and bake at 350º for 30-40 minutes.
