6 zucchini ( 6 cups)
2 cups grated cheese
2 eggs
2 cups sour cream
2 Tbsp. crushed bacon

Directions:
Directions:
Slice zucchini and cook until tender and crisp. Season to taste. Separate eggs, mix yolks with sour cream. Beat egg whites until light and airy. Fold whites into sour cream mixture. Put a layer of zucchini in a 1 1/2 quart baking dish, then layer sour cream mixture, then cheese. Sprinkle crushed bacon on top. Repeat layering. Bake 20-30 minutes at 350º.
