2 medium Anaheim chiles, roasted, peeled, and seeded
1/3 cup pepitas
2 large garlic cloves, peeled
1/4 tsp. ground pepper
1 tsp. salt
12 ounces salad oil
1/2 cup red wine vinegar
5 Tbsp. Cotija cheese, grated (similar to Parmagiano-
Regiano)
2 small bunches cilantro, stemmed
1 1//2 cups mayonnaise
1/4 cup water

Directions:
Directions:
Place all ingredients except cilantro, mayonnaise, and water, in a blender. Blend 10 seconds. Add cilantro a little at a time, until blended smooth. Add mayonnaise and water and blend thoroughly. Place in airtight container and refrigerate.
