3/4 cup (1 1/2 sticks) butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1 cup all-purpose flour
1 tsp. baking soda
2 1/2 cups quick-cooking or old-fashioned oats
1 2/3 cup (10 oz. package) Hershey's premier white chips
3/4 cup chopped dried apricots

Directions:
Directions:
Heat oven to 375º. Beat butter, granulated sugar and brown sugar in large bowl on medium speed of mixer until fluffy. Add egg; beat well. Add flour and baking soda; beat on low speed until combines. By hand, stir in oats, white chips and apricots. Dough will be stiff. Drop dough by tsp. 2 inches apart onto ungreased cookie sheet.

Bake 7 - 9 minutes or just until light browned on the bottoms. Do not overbake. Cool one minute, Remove to wire rack and cool completely.
