"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

10-12 large eggs
sharp cheddar cheese (the bag)

This is free form, my mom makes it and has no measurements so you can't really mess it up!
Butter the bottom of a large Pyrex baking pan and preheat the oven to 375º.
Cut French bread in thick slices and butter the bread, then cut in big cubes. If there is too much crust cut it off.
Mix together eggs and milk, set aside.
Layer the bread cubes on the bottom of the pan, then top with cheese. Layer with more bread, top with cheese again. It can be stuffed with bread then pour eggs and milk mixture over top. It soaks up a lot of mixture, it you need more, add milk.
Let it sit overnight in the fridge and bake for about 45 minutes, we like it very brown and crusty. Serve hot with salsa.
