1/2 c. margarine
2 Tbsp. sugar
1 c. flour

FILLING
1/4 c. lemon juice
2/3 c. sugar
1 egg white
4-5 drops yellow food coloring
1 8-oz. container cool whip

Directions:
Crust: Combine margarine and sugar then add flour. Place 1/4 cup of mixture in a small baking pan. Press remaining mixture in a 9" pie pan. Bake both pans in 375º oven, the small pan 10-12 minutes and pie pan 12-15 minutes. Cool. Use a fork to break up the mixture in the small pan into crumbs.

Pie: Combine the first four ingredients for the pie in a small mixing bowl. Beat with electric mixer on highest speed 3-5 minutes or until soft peaks form. Fold in one 8-oz. container cool whip. Spoon into baked shell. Sprinkle with crumbs. Freeze. If you double this recipe it will make a 9x13 pan.

My Mom used to make this and it was a favorite of mine. I would ask for it for my birthday cake. I served it to my Wartburg friends one summer and it was a big hit. One of those friends has a home business where she caters bus tours. She asked if I would share the recipe, which I did, and she now serves "Mrs. Alke's Lemon Pie" to bus loads of people.
