Lots of grated Potatoes (approx. 1 per person)
Lots of shredded onions
Flour (just enough to hold together)
1 egg
salt and pepper
vegetable oil

Ok, I know I don't have the amounts for these pancakes, but Mom never really measured anything when she cooked. Grate your potatoes and drain them with a paper towel to soak up the excess water. Mix potatoes with onions (she sd you can never have enough onions for her, she loved onions), flour, 1 slightly beaten egg, and salt and pepper. You must have enough flour so that they are not runny. Drop into hot oil and flatten out slightly and fry till brown and crispy. Great served with apple sauce.

Mom liked to cook these as a side dish when she made veal or chicken cutlets. But when we were little kids we ate them as our main meal with a side of applesauce. I like them with ketchup on top too. Yummy
