Christmas Almond Slices Recipe

2/3 cup shortening
1 large egg
1 egg yolk
1 tsp. almond extract
1 tbsp. whole milk
2 cups flour
1 tsp. salt
1/2 tsp. baking soda

Garnishment:
thin butter icing
toasted coconut and almonds

Directions:
Directions:
Preheat oven to 350º. Cream shortening and sugar till light and fluffy. Beat in eggs, flavouring and milk. In a separate bowl stir dry ingredients together then fold into dough by hand. Divide dough into 6 equal portions and shape each into a 10" roll. Place about 3" apart on greased or parchment lined baking sheets. Flatten to about 1/2" thickness. Bake about 15 minutes till golden around edges and set in middle. While still warm cut crosswise into 1" slices but don't separate slices. Let cook then ice with thin butter icing and sprinkle with toasted shredded coconut and almonds.

Grandma Coleen only made these at Christmas - that's why I call them Christmas Almond Slices. They're fast and easy to make, look pretty and taste good. A good recipe to send to school or for bake sales. You can do them "nut free" too - substitute vanilla for the almond extract and omit the almonds and coconut on top. Auntie Karen
