1 cup butter
3/4 cup white sugar
1 tbsp. fresh lemon juice
grated rind of 1 lemon
1/4 tsp. salt
1/2 tsp. baking powder
2 cups sifted flour
1 cup ground almonds

For sandwiching the cookies:
1/2 cup apricot jam

For topping melt together:
1/2 cup semi-sweet chocolate chips
1 tbsp. butter

Garnishment:
Split almonds

The instructions say to knead all the ingredients (except the jam and chocolate chips) together - but I make them like any other cookie dough (cream the butter and sugar first etc.). Chill the dough at least 2 hours then roll out fairly thin (1/8 to 1/4") and cut with round cookie cutters. Bake on greased or parchment lined cookie sheets in a preheated 350º oven about 8 to 10 minutes. Once cooled sandwich together with jam and spread one side with melted chocolate and top with a split almond.
