1/2 cup butter
1/2 cup shortening
2 cups brown sugar
2 large eggs
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 cups flour
1 cup sweetened shredded coconut
2 cups rolled oats (not instant)

Filling:
1/2 pound dates (chopped)
1/2 cup cold water
2 tbsp. brown sugar
2 tbsp. orange juice
grated rind of 1/2 an orange
Combine in saucepan and cook stirring over low heat till soft and well mixed. Let cool.

Preheat oven to 350º. Cream butter, shortening and sugar till light coloured. Beat eggs in one at a time. In a separate bowl stir baking soda and powder plus salt and flour together. By hand fold and stir flour mixture into dough. Stir in coconut and oatmeal last. Roll dough into balls and place on greased or parchment lined cookie sheets. Flatten with the lightly floured bottom of a drinking glass. Bake 10 minutes depending on your oven. When cool sandwich together with date filling.

This recipe is from Steven and Carly's Grandma Rose Garriock. These oatmeal cookies are really good even without the date filling. I add raisins (plump in hot water or juice first) to the cookie dough and omit the coconut.
