Four Eggs - room temp.
1c whole wheat flour
1c skim milk

1/2 tsp salt
Oil for pans

Muffin tins, this makes about 12 Yorkshires

Beat WELL first 4 ingredients together to form a smooth batter and air bubbles form on top stand for at least 30mins at room temp.

Pour 1 tsp of oil into each muffin tin and place into hot oven 425 degrees until oil is very hot - almost smoking. Immediately poor batter into the tins about 3/4 full and bake at 420 degrees for approx. 10-15 mins or when they look golden brown and have puffed right up.

Note: make sure not to open oven until ready just turn oven light on to see how they are doing.
