12 oz. semisweet chocolate chips
6 Tblsp. butter, cubed
3/4 tsp mint extract
2 c crushed Oreo cookies (about 20)
2 c chopped walnuts
2 pkg. (8 oz. each) cream cheese, softened
1/2 c sugar
4 eggs
1/4 c flour
2 Tblsp cold brewed coffee

In a microwave-safe bowl, combine chocolste chips and butter. Microwave, uncovered, on HIGH for 1-2 minutesor until melted. Add extract; stir until smooth. Stir in cookie crumbs and walnuts (mixture will be very moist). Set aside 2 cups for topping. Press remaining crumb mixture onto the bottom of a greased 13x9 pan. Bake at 350º for 10-12 minutes. Meanwhile, beat cream cheese and sugar until smooth. Add eggs, one a time, beatingwell after each addition, Gradually add flour and coffee and mix well. Spread over crust. Sprinkle with reserved crumb mixture. Bake for 25-27 minutes, or until set.Cook on wire rack.
