4 c cooked rice (on the dry side)
1/2 lb bacon, cut in small pieces
1/2 tsp salt
1/2 c green onions, chopped
2 eggs, beaten
1-2 T. soy sauce
1/2 c green peas (optional)

Directions:
Directions:
Cook bacon bits until crispy and remove to a dish. Use 1-2 Tbl oil and heat pan hot. Add green onions, saute 30 seconds, and eggs, scramble. Add rice and the rest of the ingredients. Mix constantly for rice to coat the soy and egg mixture. Return bacon to pan and mix with rice. Serve piping hot and pass soy sauce for flavoring. Serves 4
