1 T. unsalted butter
1 1/2 lbs cherries, pitted
3 T. flour
pinch of salt
1/4 C. sugar
4 large eggs
2 large egg yolks
1 C. milk
1 C. heavy cream
1 vanilla bean scraped of seeds
3T. kirsch

Directions:
Directions:
Preheat oven to 375º. Butter 10-inch porcelain tart dish, and fill with cherries. Set aside.
Sift flour & salt together in a large bowl. Add the sugar. Gradually whisk in the whole eggs, egg yolks, milk, and cream. Add vanilla bean scrapings and Kirsch; whisk to combine.
Using a sieve, stain the batter over the cherries. Bake until puffed and brown, about 45 minutes. Let cool until warm; it will sink slightly. Dust with powdered sugar, and serve.
