1 - 2 lb package frozen hash browns
1 - 16 oz carton of sour cream (save a little to serve with casserole)
1 can cream of chicken soup
2 cups packaged grated cheese
1/2 Vidalia onion, chopped and cooked

Directions:
Directions:
Preheat oven to 325º. Grease a 9x13 casserole. Chop and cook Vidalia onion until soft. Set aside. In a large bowl mix hash browns, sour cream and can of cream of chicken soup. Stir in 1 cup of the grated cheese. Add onions, stir again. Pour mixture into a greased casserole dish. Sprinkle with remaining cheese. Bake in 325º oven for 30 minutes or until cheese is golden brown. Cool and cut into squares and serve with a dot of sour cream. Yummy!
