1/2 Cup Melted Butter
1 Cup Madeira Wine (buy in liquor store)
3 T. Soy Sauce
3 T. Worcestershire Sauce
1 Lemon cut in half
1 10-12 lb. Turkey
Cooking Spray
2 T. Cornstarch
1/4 Cup Water

Heat oven to 350º Combine first 4 ingredients and juice from 1/2 lemon, set aside.

Remove giblets and neck from turkey; reserve for other uses. Rinse turkey and pat dry. Tie ends of tail with cord if the legs are not tucked under the flap of skin. Lift wing tips up and over back and tuck under bird.
Place turkey on rack of a roasting pan, breast side up. Rub turkey with the other 1/2 lemon, squeezing juice over turkey. Spray with the cooking spray. Baste with the Madeira mixture. Bake for 3 hours or until done basting every 20 minutes. If turkey starts to brown to quickly, cover with foil.
When the turkey is two-thirds done, cut the cord or band of skin holding the drumsticks to tail; this will ensure thighs are cooked internally. Turkey is done when pop-up time pops up or drumstick is very loose. Remove from oven and let sit for 15 minutes.

To make gravy; While turkey is cooking, put the giblets and heart in a small sauce pan with 2-3 cups of water and bring to a boil, then reduce heat to medium and cook until tender. Remove the giblets and heart and cut into small pieces and return to the water or discard. Then add the turkey drippings and basting mixture to the water and bring to a boil. Combine 2 T. cornstarch and 1/4 cup water, stirring until smooth. Pour into sauce pan a little at a time until desired thickness is reached.

Most turkeys come with pop-up timers. For extra flavor, add lemon or onion sections, sprigs of rosemary and/or basil to the inside of the turkey.
