Whole Chicken Fryer

Chicken Rub or Butt Rub
1/2 Small Onion

Heat oven to 350º
Remove the liver, heart etc... from inside, if any. Wash and pat dry the chicken. Using a paper towel or basting brush, lightly cover the bird with oil. Apply the chicken rub or butt rub all over. Place the onion inside the bird.
Put a small rack in the bottom of roasting pan and place chicken breast side up. Bake until done about 1 1/2 hours. If the bird browns to quickly, place aluminum foil over top.

Lauren- some chickens come with an automatic pop-up timer that will tell you when it's done. If it does not, the 2 best tests is to pierce the chicken and if the juices are clear and the leg is loose, it's done.
If you don't have chicken rub or butt rub, make your own using salt,pepper, onion powder, garlic powder, cayenne pepper, parsley, chili pepper. Just about any spice will do.
