4 steaks cut from loin or leg
2 tbsp. peanut or olive oil
1 tbsp. butter
salt & pepper, to taste
flour
Sauce:
4 tbsp. dry white wine
thyme, pinch
tarragon, pinch
1/2 tbsp. chopped parsley
1 clove garlic, crushed
2 tbsp. butter, cold

Directions:
Directions:
Heat oil and butter in a large frying pan over medium high heat. Season steaks with salt and pepper, dip into flour and shake off excess. Fry to you liking. Remove meat, set aside on a plate to catch the juices and keep warm.
Discard frying oil. Pour wine and meat juices in the pan and add the herbs and garlic. Boil down liquid by half, leaving 2 tbsp. Over high heat, lift one side of the pan and shake when adding pieces of COLD butter, so butter will combine with the liquid.
Place steaks on warmed plates and pour sauce on top. Serve with green beans and oven roasted potatoes.
