Sift together:
2 3/4 scant cups flour
1 3/4 cups sugar
4 tsp baking powder
1 tsp salt

Cream:
2/3 cup shortening
1/3 cup juice from cherries
2/3 cup milk

Mix in dry ingredients.

Add: 16 marschino cherries cut in pieces (drained).

Add 5 egg whites (unbeaten)

Fold in chopped walnuts.

Pour into two greased 9 inch cake pans. Bake at 350º for 30 to 35 minutes.

Ice with 7 minute icing (You can find a recipe in a regular cookbook)

This was our favorite cake and we had it for every birthday. Grandma Dot was baking this cake when Grandpa Earnie cut his hand badly on the table saw as he was building on our bedrooms. She hurried out the door to take Dad to the hospital and hollered to me to take the cake out of the oven----so I did---and it was still raw. (Grandma Jan)
