Peppered Pecan & Pear - Blue Cheese Salad Recipe

Ingredients: Dressing 1/2 C. safflower oil 1/2 C. blue cheese crumbled 3T. shallots chopped
Salad 2 large bunches watercress stems removed 1 large head Boston lettuce torn 2 ripe pears sliced
Peppered Pecans 1/2 T. kosher Salt 1/4 C. sugar 1/2 T. coarse ground pepper 1 C. pecan haves (or pieces)

Directions:Dressing Mix all ingredients and chill for at least 2 hours
Salad Mix and chill for at least 2 hours
Peppered Pecans 1. heat heavy skillet over medium heat 2. Combine all ingredients except pecans in a large measuring cup 3. lightly oil a cookie sheet and set aside 4. When skillet is very hot(a drop of water will dance and vaporize when dropped on pan)place pecans in skillet & toss for 1 minute. (Don't let them scorch). Then sprinkle sugar mixture over the nut, shake to make sure that the sugar is on the bottom of the pan. Let the sugar melt shaking pan until the sugar in melted and browning. Make sure it does not burn! Then start stirring the nuts with a large wooden spoon. Very soon they will be candy coated. Immediately turn nuts onto the cookie sheet and allow to cool, separating the nuts as they cool. Store in an air tight container until ready for use. |
