Grandma Dot's Raisin Cookies Recipe

Cream:
1 cup shortening
1 cup brown sugar
1 cup white sugar
2 beaten eggs

Mix:
4 scant cups of sifted flour
1 tsp soda
1/2 tsp salt

Filling:
Blend 1 1/2 - 2 cups raisins
Add 1/2 cup water
1/4 cup sugar
Cook for five minutes on low heat, stirring constantly. Let cool till warm.

Mix the creamed and dry ingredients. Don't make it too stiff, but easy to handle. Divide into two balls. Roll out one ball about 1/4 inch thick. I use a lightly floured pastry cloth or wax paper to roll it out on. Spread with 1/2 of the warm raisin mixture. Use the wax paper to help roll up the dough. Repeat with the second ball of dough. Wrap the rolls in waxed paper. Chill at least overnight. The dough will stay good a couple of weeks in the fridge. Slice the dough into 1/4 inch slices while it is still cold or it will really crumble. You can freeze the dough and slice it while it is still quite frozen. Place slices on a cookie sheet sprayed with PAM. Bake 350º for about 13 minutes till quite light brown and the center set. You can leave them in the hot pan for a minute to finish cooking if they don't seem clear done.
You will learn how it works best for you to get them to roll out. If the dough is too dry, it won't roll out good.

Grandma Dot makes these every year for Christmas. They are Grandma Jan's favorite cookie, especially the Cookie Dough! Grandma Dot always saves her a big chunk of dough to eat raw! Yum!
