12 oz. rigatoni or other short pasta
1 lb ground sirloin or buffalo
1 medium onion
2 garlic cloves
1 small can tomato paste
1 T. red-wine vinegar
1 T. sugar

Directions:
Directions:
1. In large pot cook pasta in boiling salted water until al dente, drain and set aside
2. While pasta is cooking, cook beef in large saucepan over med-high. cook until no longer pink. Add onion and garlic; season with salt and pepper. cook until onion is soft.
3. Stir in tomato paste and cook about 2 minutes. Add 1/1/2 cups water, bring to a boil, reduce to simmer and cook until slightly thickened (8-10 minutes). Stir in vinegar and sugar and season again with salt and pepper.
4. Add sauce to pot with pasta and toss to combine
