2 1/4 cups Flour
3 1/4 tsp Baking Powder
1 tsp Salt
1 1/2 cups Sugar
1/2 cup Shortening
2/3 cup Milk

1/2 cup unbeaten Egg Whites
1/2 cup Milk
1 tsp Vanilla
1/2 cup Coconut

Frosting:
2 Egg Whites
3/4 cup Sugar
1/3 cup White Karo Syrup
1/3 tsp Cream-of-Tarter
1 tsp Vanilla
2 tbsp Water
Directions:
Directions:
Beat together first six ingredients. Add the next four ingredients. Pour into two round cake pans. Bake at 325º for 25-28 minutes. Cool, invert onto serving plate and frost each layer. Cover completely with shaved fresh coconut!!!
