4 salmon fillets
olive oil spray
30ml salt-reduced soy sauce
2 tsp brown sugar
2 tsp grated fresh ginger
2 tsp sesame oil
1 tbsp sesame seeds, toasted
Asian Greens:
2 bunch asian greens (to serve 4)
1/4 cup oyster sayce
1 tbsp soy sauce
1 garlic clove, crused
1 cm piece ginger, peeled, finely grated

Directions:

Heat a large non-stick frying pan over high heat. Spray both sides of the salmon with olice oil spray. Add salmon to the pan and cook for 2-3 mins. Turn and cook for a further 1-2 mins for medium or until cooked to your liking.
Meanwhile, combine the soy sauce, sugar, ginger and the sesame oil in a small bowl. Stir until the sugar dissolves.
Divide the greens among serving dishes and top with salmon fillets.
Drizzle over the ginger soy dressing and sprinkle with sesame seeds.
Serve with steamed jasmine rice.

Asian Greens:
Place oyster sauce, soy sauce, garlic and ginger in a screw-top jar. Secure lide and shake to combine.
Cook the greens in a saucepan of boiling water for 30 seconds until wilted, but remaining bright and crisp. Drain.
Pour the sauce mixture over the greens and toss to combine.
Divide among serving bowls.
