Ingredients:  
Ingredients:  
2 Tbls olive oil
2 Tbls unsalted butter
1/4 C shallots, Chopped
salt and pepper to taste.
4 Cloves garlic, minced
1/4 Sherry or other cooking wine.
1 1/2 oz dried mushrooms, reconstituted & chopped
2 C chicken broth (veggie broth works as well)
1/2 C heavy Cream
2 Tbls constarch plus 3 Tbls h2o (to make slurry)

In meduim pan, heat oil & butter on high. Add Shallots, season & carmelize. Add garlic & cook till aromatic. Add sherry & cooktil almost evaporated. Add cream cook for 4-5 mins. til thick. Carefully strain Liquid to another pan. Return to high heat & add cornstarch slurry. Whisk til thickened. Remove from heat immediately. Adjust seasoning.

To reconstitute: Soak dried mushrooms in lukewarm water for 30 mins to one hour.rinse throughly when done.
