2 med yellow squash
2 lg zucchini
1 vitalia onion thinly sliced
2 large tomatoes, sliced
2 c grated roman cheese
1/2 c butter, divided
salt and pepper to taste

Directions:
Directions:
Preheat oven at 375º F. Cut squash and zucchini into long thin strips. Lightly grease 7x11 baking dish and layer zucchini, squash, onion, and tomato. Sprinkle with cheese and add pats of butter between each layer and season with salt and pepper. Top off with butter and cheese. Cover and bake for 30 min or until very tender and cheese is melted and bubbly. (Sometimes it takes longer to cook depending on how thick the squash and zucchini are cut.)
