6 Cornish game hens
2 TBS Rosemary
¼ tsp Ground red pepper
2 TBS Minced garlic
½ tsp Black pepper
Salt to taste

Directions:
Directions:
Preheat oven to 450 degrees. Trim hens of any visible fat; rinse and pat dry. Combine minced garlic, rosemary, black and red pepper and salt. Rub under and over the skin of each hen. Rub any excess seasoning into the cavities. Truss each hen using a 6-inch bamboo skewer or cooking twine. Place in single layer on a rack in 1 or 2 roasting pans. Roast 15 minutes. Lower the oven temperature to 350 degrees; bake 35 minutes longer or until juices run clear when inner thigh is pierced. Cool to room temperature; serve with pineapple spears and fresh mint. Outstanding for Sunday dinner or a special occasion.
