1/3 cup Clarified butter or oil
9 TBS Fresh cracked black pepper
Salt to taste
6 – 7 oz Tuna steaks
Dijon mustard sauce or basil lemon sauce

Directions:
Directions:
Heat clarified butter or oil in a heavy skillet over medium-high heat. Press pepper and salt onto one side of each tuna steak. Sear tuna quickly on both sides and cook to medium rare, 3 to 4 minutes per side – or to desired doneness. Arrange on plate, add sauce and garnish as desired.

NOTE: To clarify butter, slowly melt 1/3 cup butter in saucepan. Skim foam off the top and pour off clear butter, leaving the milky residue in the bottom of the pan.
