1 cup cider or apple juice
1 1/2 to 2 lb pork loin
salt and pepper to taste
2 large granny smith apples, peeled and sliced
1 1/2 butternut squash, peeled and cubed
1/2 cup packed brown sugar
1/4 tsp. ground cinnamon
1/4 tsp. dried thyme
1/4 tsp. dried sage

Directions:

Heat cider in hot skillet. Sear pork loin on all sides. Sprinkle meat on all sides with salt and pepper. Place meat and juices in slow cooker. Combine apples and squash in bowl. Sprinkle with brown sugar and seasonings. Stir. Place around pork loin.
Cover and cook on low for 5 to 6 hours. Remove and let stand for 10 minutes. Slice meat and serve with apples and squash
