1 T. Peanut Oil
3 T. Minced Red Onion
2 T. Minced Garlic
2 T. Grated Ginger Root
1 Can Minced Water Chestnuts
1 1/2 lbs. Ground Turkey
3 T. Soy Sauce
1 t. Chili Garlic Sauce (more if you like it spicy)
1 t. fish sauce (optional if you don't have it)
1 c. chopped fresh cilantro
1/3 c. chopped peanuts

lettuce of choice or the wraps. (I like to use crisp long strips of romain.)

Heat oil in a large frying pan. Saute onion for about two minutes, then add the garlic, chestnuts and ginger and saute for about one more minute.

Add ground turkey partially cook, then add the soy sauce, chili garlic sauce and fish sauce. Continue cooking until the turkey is browned and crumbling apart.

Serve in washed and chilled lettuce pieces. With cilantro and chopped peanuts on top.
