1c. whole milk
2 eggs
1c. soy protein
1 1/ 2 t. white pepper
1 1/2 t. mace
1/2 t. ginger
1 1/2 t. nutmeg
2 1/2 T. salt
1 t. black pepper
1 t.all spice
5 lb.ground pork
¼ t Cayenne pepper

Grind pork through coarse blade twice. Use pork butts and grind yourself, look for fattier pork butts as some have tendency to be too lean.
Mix all other ingredients separately from meat, mix well, be sure all ingredients are dissolved.
Mix thoroughly into the meat.
Stuff into hog casings and make into 5" links. Sausage is now ready to cook or freeze for storage.

Best way to cook is on the grill until pork is well done, outside is browned and sausage has shrunk from cooking some fat out of it. About 20 to 25 minutes.
