90 medium tomatoes (28 lb. whole)
12 medium onions (2 3/4 lb., chopped)
20 medium green peppers (7 1/2 lb., chopped)
24 jalapeņo peppers (seeded and chopped) (2 1/2 cups)
3 heads garlic (1/2 cup minced)
1 3/4 c. vinegar
1/2 c. salt
1 1/2 T. basil
3/4 c. sugar
1 T. cumin
1 T. chili powder
2 1/2 t. cayenne pepper
18 oz. tomato paste

Blanch tomatoes, skin, grind through coarse grinder. Seed peppers and chop along w/ onions and garlic.
In a large kettle add vinegar, sugar, salt, onions, green peppers and garlic. Bring to a boil, then add tomatoes, jalapeņos, cayenne and other seasonings. Add tomato paste.
Cook for 1 to 2 hours until salsa is thickened as you like it.
Put in jars, seal and process in hot water bath for 20 minutes.
