5-6 lb. leg of lamb, boned and butterflied
2 cloves garlic, minced
1/3 C. lemon juice
1/2 C. soy sauce
2 Tbsp. thyme
2 Tbsp. Hawaiian rock salt
freshly ground pepper
1/2 C. olive oil

Directions:
Directions:
Rub lamb with garlic. Pour lemon juice and soy sauce over the lamb. Sprinkle with thyme, rock salt and pepper. Add oil, coating lamb well. Marinate at room temperature for 4 hours or in the refrigerator 8-10 hours. If refrigerated, bring to room temperature broiling. Broil for 10-15 minutes per side for medium-rare lamb.
VARIATION: 2 Tbsp. each of tarragon and rosemary may be added to the marinate.
