1 1/2 pounds shrimp, raw (peeled, deveined)
1 cup lemon juice
Juice of 3 limes
2 tomatoes, peeled and diced
1/2 cup chopped green onions
2 ounces ( 1/2 can) diced green chiles
1 tsp. salt
1 tsp. cilantro chopped
1/2 tsp. ground pepper
1/2 tsp. garlic, mashed
1 tsp. oil
4 diced stuffed green olives (optional)

GARNISH :
1-2 avocados peeled and sliced
Whole black olives

Cut raw shrimp into 1/2” pieces and marinate in lemon and lime juices until “cooked”, about 6 hours, in refrigerator. Be sure shrimp has turned white (opaque). Don’t leave in juice too long or shrimp will get tough. Drain and rinse shrimp with water. Mix shrimp with remaining ingredients. (except garnishes). Top with desired garnishes and serve with crackers or chips. Fritos or tortilla chips work best.

VARIATONS: Omit diced tomatoes and put in 1 cup of
Chachi’s salsa.
Scallops or white fish can also be used in place of or with shrimp.
