1 gallon of tomatoes
1 large onion, chopped
3 bell peppers, chopped
4 garlic cloves chopped
1/2 c. white vinegar
2 T. canning salt
1/2 c. sugar
10 jalapeņo peppers
1/4 t. cayenne pepper

Directions:
Directions:
Drop tomatoes in boiling water for about 1 minute, then drop them into ice water. his will allow you to slip the skin from the tomato.
Then put all ingredients in large cooking pot and bring to a boil, stir occasionally to prevent sticking. Simmer for 30 minutes or longer for thicker Rotel. Adjust seasoning for personal taste, especially garlic and pepper. Will yield 5 to 7 pints. Pour into sterilized jars, seal and process in water bath for 10 minutes.
(Option: for hotter taste increase jalapeņo to 13 and the cayenne pepper up to 1/2 t.)
