3 cloves elephant garlic, finely chopped or minced
2 shallots
1 stick butter
small amount milk or cream
salt and pepper to taste
2 oz. Asiago cheese
5 lbs. your favorite mashing potatoes, peeled, cooked and drained.

Directions:
Directions:
Melt butter. Saute garlic and shallots over low heat until softened. Add to drained potatoes, mashing as you mix. Continue mashing and adding small amounts of milk or cream until potatoes are desired consistency. Add salt and pepper. Grate Asiago cheese into potatoes. Mix well.
