1 can of white corn
1 can of black beans
1 can of pinto beans
1 can of black eyed peas
1 green pepper
1 red pepper
1 yellow pepper
3 stalks of celery
1 cup of red onion (diced)
2 jalapeņos

Marinade:
1/2 cup of vegetable oil
1 cup of apple cider vinegar
3/4 cup of sugar

Marinade:
Mix vegetable oil, apple cider vinegar, and sugar into small sauce pan. Boil on stove until sugar dissolves. Let cool.

Drain and rinse white corn, black beans, pinto beans, and black eyed peas. Combine in large bowl.

Dice peppers, onion, celery, and jalapeņos. Combine with beans and corn. Mix vegetables and beans together. Once marinade has cooled down, pour it over the vegetables and beans. Toss together and place in fridge for at least a few hours (over night is recommended).

Serve with Frito Scoops or over a bed of lettuce.

If you prefer it not to be spicy, you can omit the jalapeņos. I will sometimes use giardiniera (around 3-4 tablespoons, chopped) in place of the jalapeņos to still give it a little kick.
