1 1/4 cups Warm Water
1 pkg Active Dry Yeast
1 1/2 tsp Salt
3 tbsp Soft Shortening (Crisco)
4 cups Sifted Flour

Egg Glaze:
1 unbeaten Egg White
2 tbsp Water
(Mix together w/ fork.)

Directions:
(375º) Mix all ingredients well. Cover and let rest in bowl 15 minutes. Knead until smooth (about 10 minutes) then cover with damp cloth and let rise about 1-2 hours. Punch dough down and let rise about 30 minutes, or until almost double. Roll into 15x10" oblong. Roll up tightly toward you. Roll back and forth to make bread loaf as long as you want it. Place on a greased cookie sheet that has been sprinkled with cornmeal. Make slashes across the top of the bread loaf about every 2" and each about 1/4" deep. Brush top with cold water. Let stand uncovered about 1 1/2 hours. Brush again with water, then place in oven and bake for 20 minutes, then remove from oven, brush with 'egg glaze'. Bake 25 minutes longer.
